Yam is the common name for some plant species in the genus Dioscorea that form edible tubers. These are perennial herbaceous vines cultivated for the consumption of their starchy tubers in Africa, Asia, Latin America, the Caribbean and Oceania. New yam begins making its way to America in September. Until then the yam tubers would be referred to as Old yam. Old yam is often harder and drier. It should always be kept in a dry surface and the atmospheric temperature should by reasonably warm. The following preservation instructions also apply to new yam.
